Stir Fried Pineapple and Mango Recipe

Stir frying fruit is a quick and healthy way to create mouth watering combinations of sweet flavors in minutes.

  • 1/2 inch piece of fresh ginger grated
  • 1/2 fresh pineapple cored and sliced into 3 long sections and then 5 cross sections.
  • 2 ripe but firm mangoes peeled, pit removed and sliced into 8 pieces each. You can also use firm papaya.
  • 2 tbsp extra-virgin coconut oil
  • 1/2 cup loose sliced fresh basil
  • 1/3 cup toasted slivered almonds
  • 1/2 fresh lime
  • 1 pinch sea salt


  1. Heat wok over medium heat and add 1 Tbsp. of coconut oil. Swirl to coat wok.
  2. Add ginger and stir-fry 1 minute.
  3. Add pineapple to wok with ginger. Stir-fry over high heat 2-3 minutes. Transfer to serving bowl
  4. Add remaining coconut oil to wok, add mangoes and stir-fry 2-3 minutes. Add basil and lime juice and stir fry 30 seconds more.
  5. Return pineapple to wok and gently combine the fruits, adding slivered almonds.
  6. Place fruit in serving bowl and top with pinch of sea salt.
