The Soufflé Jelly Omelet
- 3 Eggs Separated
- 1 tbsp Plain Greek Yogurt
- Pinch Kosher Salt
- 1/2 Lemon Rind Grated
- 1 tbsp Butter
- 2 tbsp Good Quality Berry or Fruit Jam
- Confectionary Sugar for Garnishing
Preheat oven to 350°. Combine egg yolks, yogurt, salt, and grated lemon rind. Set aside.
Using an electric beater or whisk, beat egg whites until soft peaks form. Gently fold the yolk mixture into the egg whites using a large spatula.
Melt butter in a large ovenproof frying pan over low heat. Pour the egg mixture into the frying pan and bake in the pre-heated oven for 6 minutes, until puffy and golden.
Slide onto a warm serving plate and spread with the jam of choice.
Fold the omelet over and dust it with confectionary sugar.
