Strawberry Salsa has it all going on. It can be used as the base for a healthy DIY summer sipper, served as a dessert salsa with cinnamon chips or used as a delicious topping for ice cream.

Cinnamon Chips Recipe

Servings 8 people

Ingredients

  • 10 flour tortillas
  • Avocado cooking spray
  • cup sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F. Combine cinnamon & sugar. Set aside.

  2. Working with 3 tortillas at a time, spray both sides of the tortilla and sprinkle with sugar mix.
  3. Stack 3 tortillas and using a pizza cutter, cut tortillas into 12 wedges.
  4. Place on a baking sheet and bake 8-11 minutes or until crisp.

Recipe Notes

Cool before serving.

These are delish and kids love them. I use gluten-free cassava flour tortillas.

 

Strawberry Salsa

Servings 6 people

Ingredients

  • 1 lemon zested and juiced
  • 1 cup kiwi finely chopped
  • 1 pound strawberries hulled cleaned and chopped
  • 1 tbsp finely chopped mint leaves
  • 1 tablespoon strawberry preserves

Instructions

  1. Zest lemon and set aside.
  2. Finely chop strawberries and kiwi.
  3. Gently combine all ingredients.
  4. Allow to sit at room temperature for 15 minutes before serving.

Recipe Notes

Serve with cinnamon chips and watch it disappear. Kids love this so make a double batch.
