You can make this healthy Shrimp and Vegetable Lo Mein in about thirty minutes, it’s as yummy as takeout and so much better for you!

Shrimp and Vegetable Lo Mein Recipe

Servings 4


  • 3 tbsp. avocado oil
  • 6 green onions thinly sliced
  • 1 3" knob of ginger peeled and chopped
  • 4 large cloves garlic chopped
  • 1 large carrot julienned or grated
  • 1 red pepper julienned
  • 1 cup fresh snow peas
  • 1 can water chestnutsdrained and very coarsely chopped
  • 1 cup baby spinach
  • 1/2 cup sliced basil
  • 6 oz cooked Chinese egg or Lo Mein noodles cooked al dente
  • 1 1/2 tbsp. oyster sauce
  • 1 1/ tbsp. soy sauce
  • 2 tsp sesame oil
  • 2 tsp coconut sugar - optional
  • 1 tsp sriracha
  • 2-3 tbsp. chicken stockas needed
  • 12 large cooked shrimp


  1. In a small bowl, combine oyster sauce, soy sauce, sesame oil,sugar, and sriracha.

  2. Preheat vegetable oil in a large pan or wok. Add green onions and ginger, cooking for 2-3 minutes. Add garlic, carrot, pepper, and snow peas,cooking for 2-3 more minutes. Toss in the cooked shrimp and heat through. Stir in spinach and basil until wilted.

  3. Add the noodles and sauce to the pan and stir to combine. If the noodles seem dry, add stock as needed to loosen the mixture and deglaze the pan.

  4. Serve in bowls with shrimp on the top and some sliced scallions.
