Bananas are one of those fruits that can be transformed into an unexpected delight by simply changing they way you cook with them. I love freezing bananas to make a dairy-free gelato taste-alike, tucking sliced bananas into chia pudding, and roasting bananas to create a healthy dessert that tastes too delicious to be good for you.
Bananas are loaded with dietary fiber, potassium, B6, and help create optimum gut balance. They are also inexpensive, easy to work with, and can be turned elegant with a few simple additions.
I am always trying to make my recipes more supportive of wellness and overall health. The addition of cinnamon and nutmeg add antioxidant and anti-inflammatory benefits, and well as lots of flavor. The curry gives the orange cream a pop of color, and adds the super health benefits of curcumin, the spice that gives curry its yellow color.
By adding chopped pistachios as a finishing touch, the roasted bananas are elevated with texture and color. Pistachios are technically not nuts, but seeds. They are a member of the cashew family and their bright green color is due to their high antioxidant content. They are an excellent source of protein, fiber, vitamins and minerals. They also taste great!

Roasted Bananas with Orange Cream and Pistachios Recipe
Roasting bananas changes them from a breakfast fruit into a silky, sophisticated dessert that pleases even the most ardent banana haters.
Ingredients
- 2 firm bananas
- 1 tsp. fresh lemon juice
- 1 tsp. dark rum or bourbon
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 1 Tbsp. dark brown sugar
- 1 Tbsp. melted butter
- 1 5.3 oz container of full fat vanilla or plain coconut milk yogurt liquid poured off
- Zest and juice from 1 orange
- Dash turmeric
- 1/2 cup crushed toasted pistachios
Instructions
- Preheat oven to 400 degrees.
- Peel and slice bananas crosswise.
- Grease an oven-proof baking dish with butter or coconut oil and add bananas.
- Combine lemon juice, rum, cinnamon, nutmeg, melted butter and brown sugar in a small bowl. Evenly pour mixture over bananas.
- Roast bananas in center of oven for 20 minutes. Remove and cool.
- In a small bowl combine yogurt, turmeric and 1 Tbsp orange juice.
- Place 2 roasted bananas on each plate, add a dollop of orange cream and garnish with crushed pistachios and orange zest.
