Everything spicy is nicey with this fall-flavored chia pudding. I am not a fan of artificially flavored pumpkin spice everything, but this recipe makes you want to curl up by a warm fire on a cold day.

Pumpkin Spice Chia Pudding

Servings 4

Ingredients

  • 1/3 cup chia seeds
  • 1 cup almond milk
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup or dark molasses
  • 1 tbsp pumpkin pie spice
  • Ground nutmeg

Instructions

  1. Combine all ingredients except nutmeg in a food processor orVitamix blender. Blend until well combined and smooth, about 2 minutes on high.

  2. Serve in bowls topped with coconut milk yogurt and ground nutmeg.
