I love that you can make these with tequila for the adults and without for kids. Use Dixie cups and slices of lime to serve as a drip guard or find cute little 5.5 oz portion cups with lids and use the lid to make them drip proof. Either way, this is a refreshing summer cooler loaded with antioxidants from the pink grapefruit juice, get fresh if you can, and a spicy kick from the jalapeños. Just remember to skip the jalapeños and tequila for the kids!

Pink Grapefruit Margarita Popsicle Recipe
Ingredients
- 1 cup freshly squeezed pink grape fruit juice strained
- 1/2 cup cup freshly squeezed lime juice
- 1/2 cup blanco tequila
- 1 tbsp chopped jalapeños
- 8 lemon or lime slices for the bottom of the popsicle stick
- Himalayan sea salt
Instructions
Combine all ingredients and pour into 8 Dixie or 5.5 oz portion cups with lids. Insert popsicle stick through center of lime slice, (I make a little insert with a sharp knife in each lime, I do the same with the plastic lid on the portion cups) Then insert lime with popsicle stick into the center of the liquid.
Freeze overnight. Gently remove popsicle from cup or container, you might need to run the outside under warm water.
Add a sprinkle of salt to each popsicle
Recipe Notes
* To make kid version skip jalapeños and tequila and add a 1/2 cup coconut water to the mixture

Yum! I’m going to make these frozen delectables for my grand kiddies the next time I visit them!
Thanks for the great ideas, Kristen!
