Preheat oven to 375
Toss washed and dried watermelon seeds in olive oil and sprinkle with salt.
Place on a baking sheet and roast seeds for 15-20 minutes.
Cool on paper towels and enjoy with soups, salads or just nibble as a snack.

I haven’t even tried the recipe yet. I’m giving you 5 stars for being the first recipe I’ve seen online in 20 years that didn’t have 9 pages of irrelevant life story about back in gramma’s house, blah blah blah to scroll through.
I was so pleasantly surprised to just see a recipe! Thank you!
Thank you Doreen. I agree that the endless scrolling gets tedious and simple tasty recipes are the best!
I definitely intend to try this.. might sprinkle some with Tajin instead of salt.
Yes! Let me know how it tastes!
Best review ever. I too, hate scrolling endlessly just to find what i am looking for. Collecting the seeds now to use this simple recipe.
🙂 Let me know how it goes!
I totally agree!!
Eating healthy should be simple – not complicated!
YES! I’m right with you.
After reading how beneficial watermelon seeds can be to health, I have been looking for a good recipe. I am anxious to try this one. I just wish they were easier to get out so they can be roasted. I am using a seasoning of garlic powder salt and herbs.
Let me know what you think!
Any suggestions for an oil substitution?
I just sent the healthy oil cheat sheet to your email. You can learn more about oils here: https://theculinarycure.com/what-we-dont-know-about-vegetable-oils-can-ruin-our-health/
Thanks for the comment!
Will try this recipe. I also eat sunflower seeds & Pumpkin seeds for snacks all the time.. Have been eating these seeds since the 60s. I am 76 yrs old and people comment on my skin all the time. P.S. my dogs also like them. Its funny how they crack the shells and only eat the nuts inside.
Dear Virginia,
Seeds are super nutrient dense and your dogs know a good thing as do you!
I prepare them the same way I prepare pumpkin seeds, I also do the same with seeds from any of the winter squashes and other melon seeds.
Thank. You for commenting.

I’d like to know how your dogs and you get those shells off these little seeds. There has to be a better way than I do it because it takes me forever.
