This quick and easy Kid-Friendly Salsa Fresca Recipe has the most flavor when made with summer ripe tomatoes. But if you cant find nice tomatoes, in a pinch cherry tomatoes work well too.

Kid-Friendly Salsa Fresca Recipe

Servings 2 cups

Ingredients

  • ¼ small sweet or red onion minced
  • 1 teaspoon red wine vinegar
  • 1 pound fresh ripe tomatoes, seeded and finely chopped
  • 4 tbsp chopped fresh cilantro more to taste
  • 2 tsp fresh lime juice
  • 2 jalapeño or serrano chiles seeded, minced and in a bowl on the side
  • Sea salt to taste

Instructions

  1. Place minced onion in a bowl and cover with cold water and vinegar. Let sit for 5 and drain.
  2. In a medium bowl, combine remaining ingredients and stir in onions.
  3. Let sit at room temperature for 15 to 30 minutes before serving.
