This is the recipe I used for all of my children’s birthdays and it stands the test of time.

Classic, simple and delicious, you can make this as a layer cake, pan cake or cupcakes. This simple chocolate cake with vanilla buttercream frosting tastes like birthdays and never fails to elicit sighs of joy and requests for seconds.

Chocolate Cake:

Everyones Favorite Chocolate Birthday Cake Recipe

Makes 2 9” cake layers or 12 standard cupcakes

Ingredients

  • 2 cups flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 2 tsp baking soda
  • 3/4 cup good quality cocoa powder
  • 1 1/2 cups sugar
  • 1 cup coconut oil
  • 1 cup hot coffee
  • 1 cup milk
  • 2 eggs
  • 1 tsp. vanilla extract

Instructions

  1. Preheat oven to 325 and place rack in center of the oven.
  2. Sift together all dry ingredients.
  3. Combine all wet ingredients EXCEPT EGGS and Vanilla in a large mixing bowl or stand mixer fitted with the beater attachment.
  4. Add the dry ingredients to the wet ingredients in the mixing bowl and beat on medium for 2 minutes. Then add eggs and vanilla, beating for 20 more seconds.
  5. Pour cake mixture into buttered and floured cake pans or cupcake liners in a cupcake tin.
  6. Bake for 35-45 minutes or until a toothpick comes out clean. Cupcakes will bake quicker.
  7. Cool on a rack.

Frosting:

Vanilla Buttercream Recipe

Ingredients

  • 12 oz butter
  • 2 tsp. vanilla extract
  • 6 tsp. whole milk-more if needed
  • 6 cups confectionary sugar

Instructions

  1. Put confectionary sugar in a mixing bowl or stand mixer fitted with the beater attachment.
  2. Add butter cut into slices and beat gently until butter begins to incorporate into the sugar.
  3. Add the milk and vanilla and beat until smooth.
  4. When chocolate cake is completely cooled frost with the Vanilla Butter Cream.
  5. Lick the frosting bowl.
