Tea sandwiches get a bad rap for being time consuming and fussy. But the truth is everyone loves a delish little sammie, especially around the holidays. As a former caterer I love making things as easy and tasty as possible. For this recipe I used store bought chicken salad and chopped it finely before making sandwiches. I used Pepperidge Farm very thinly sliced bread and then added the fancy garnish to makes the sandwiches look super special.

Easy Holiday Tea Sandwiches Recipe

Makes about 20-24 mini sandwiches

Ingredients

  • 1 lb store bought chicken salad chopped finely
  • 1 Loaf Pepperidge Farm Very Thinly Sliced bread of choice.
  • 1 Hot house English cucumber sliced into ribbons
  • Toothpicks
  • Mini gold Parmesan Puff heart or a mini cookie cutter piece of cheese sprayed with edible glitter

Instructions

  1. On a cutting board lay out bread slices in pairs.
  2. Place chicken salad evenly on bottom slice of bread and make sandwiches.
  3. Using a cookie cutter (I used a heart) cut 2 mini sandwiches per sandwich.
  4. Make ribbon garnish by slicing cucumber ribbons in half lengthwise and folding each thin ribbon into a garnish, secure with a toothpick. Place a ribbon garnish on each sandwich and top with glitter puff or cheese.
