
Easy Alternative Nachos
I love substituting flavorful, gluten free chips, like sweet potato, Terra Original Vegetable Chips and Yuca Chips. These alternative chips deliver crunch and fiber without gluten and trans fats. You can customize this recipe to feed a crowd or just make a single portion for yourself.
Ingredients
- 1 bag chips of choice
- ½ cup seasoned black beans mixed with extra chili powder
- ½ avocado diced
- ½ cup shredded cheese of choice Cheddar, Jack or Mexican Blend
- 1 tbsp chopped jalapeno
Instructions
Layer chips with cheese and bean mixture on a cookie sheet or oven proof platter, make sure cheese is on top.
- Place in preheated 400 oven until cheese is melted and bubbly.
- Top with diced avocado and sprinkle with jalapeño peppers.
