This Cucumber & Mint Summer Salsa is a refreshing crowd-pleasing salsa that is a favorite with adults and children.


Cucumber and Mint Summer Salsa Recipe

Servings 6 people


  • 1 large cucumber or 2 small cucumbers or 6 Persian cucumbers about 1/2 pound to 3/4 pound total, seeded and finely diced (peel thick-skinned cucumbers)
  • 1/4 cup finely diced red onion or shallot
  • 1/4 cup finely diced orange or yellow bell pepper
  • 2 Tbsp. chopped fresh mint
  • 1 tbsp. rice wine vinegar
  • 1 tbsp. olive oil
  • 1/4 tsp sea salt
  • 1 tbsp minced jalapeño - on the side


  1. Place all ingredients, except jalapeño, in a medium bowl, and gently stir to combine. Place chopped jalapeño in a bowl on the side for people who like it hot!
  2. Alternatively place all ingredients in chunks in a food processor and gently pulse until just combined. Over pulsing will result in a liquid vs salsa texture.
  3. Store for several days, covered and chilled in the refrigerator.

Recipe Notes

Perfect for serving with grilled fish, chicken or seafood. Kids LOVE it with vegetable sticks for dipping.
