Chinese Mango Pudding is full of flavor and fast to make. It’s the perfect make-ahead dessert to impress friends and family.
Chinese Mango Pudding Recipe
- 2 cups of fresh mango cubes
- 1 packet of gelatin powder
- 1/2 cup coconut sugar -to taste, you might use less! Pinch salt
- 1/2 cup filtered water
- 8 oz half and half raspberries & fresh mint for garnish
Heat the sugar and pinch salt in 1/2 cup water in a small potuntil dissolved. Remove from heat and cool. Addgelatin powderto warm water, stirring until dissolved, and let cool.
In a food processorblend 2 cups of mango till smooth.In a largebowl combine mango, gelatin mixture and half and half. Combine well.
Pour mixture into serving bowls and chill until firm.
Serve with mint and berries as garnish.
