Cooking fish at home can deliver delicious results with simple ingredients. When it comes to dinner I want to spend as little time as possible cooking, so I can spend more time enjoying my dinner with friends and family. You can add any variety of fresh snipped herbs to this recipe for a seasonal refresh, but it is a good basic recipe you will use over and over.

Buttery Lemony Pepper Fish Recipe


  • 8-10oz skinless flounder or sole, in 2 filets
  • 3 tbsp. Flour
  • 1.5 tsp. Kosher salt
  • 1/2 tsp. Freshly ground pepper
  • 1 tbsp. Olive oil
  • 6 tbsp. Salted butter in slices
  • 1 tbsp. Grated lemon zest
  • 3 Tbsp. Fresh lemon juice
  • 2 tsp. Finely chopped parsley
  • 2 tsp. Freshly ground peppercorns


  1. Combine flour salt and pepper in a small bowl and dredge fish filets in flour mixture.Shake off excess and set fish aside.

  2. Heat1 tbsp. olive oil in a large nonstick skillet over medium-high heat. When oil is hot add fish filets in a single layer and cook 2+ minutes, undisturbed or until golden on the cooked side. Carefully flip and cook the other side until fish filet is just cooked through. About 30 seconds.

  3. Transfer each fish filet to a plate.

  4. Wipe pan clean. Over low-medium heat add 6 tbsp butter to the clean pan and add freshly ground pepper. Swirl, when butter begins to foam and brown remove from heat.

  5. To the butter pan add lemon zest, lemon juice and parsley. Stir to combine and spoon sauce evenly over fish.
