Avocados are a fruit; I often forget this, and lump them in the vegetable family. This fabulous cocktail, however, reminds me just how versatile the essential fatty acid packed avocado really is. Avocados are best known for being an excellent source of monounsaturated fatty acids, they also contain potassium, B and E vitamins, and a good dose of fiber. One delicious avocado has the potassium of two and a half bananas. Yes, avocados are high in calories, but the calories come from health-promoting monounsaturated and polyunsaturated fats. Guess what? Your body knows exactly what to do with those healthy essential fats, breaking them down and using them for wellness supporting fuel.
This recipe is easy to whip up, and your friends will never guess there is avocado in this gorgeous, creamy jade colored cocktail. I make it both as a cocktail and a non-alcoholic sorbet-like refresher. You can also freeze it in a container and use an ice-cream scoop to make a delicious dessert that is perfect garnished with toasted coconut.
I love the simplicity of placing these interesting ingredients in the blender and magically transforming them into something completely unexpected.

Avocolada Recipe
Avocado is the secret ingredient in this deliciously refreshing cocktail. Avocolada is the combination of avocado, pineapple, almond milk and lime juice; and is a tasty way to up your summer sipping game.
Ingredients
- 4 ounces light rum
- 1 ounce fresh lemon juice
- 1 ounce fresh lime juice
- 1 ounce maple syrup
- 1/2 medium-ripe avocado peeled and pitted
- 1/2 cup fresh pineapple
- 1/4 cup Barista Style Almond Milk or nut milk
- 1.5 cups ice
Instructions
Combine all ingredients in a blender and blend on high until just smooth, about 20 seconds.
Divide mixture between two cocktail glasses, garnish with a pineapple spear and toasted coconut, serve immediately.
