This creamy, dreamy avocado & lime tart is a healthier version of key lime pie that satisfies and delivers goodness in every bite.
When I was a child, my grandmother lived in Key Biscayne, Florida, and she had a key lime tree in her front yard. She would let me pick the tiny little limes and then we would squeeze them for the juice and make my favorite Key Lime pie. I can still remember how I loved that way the smooth creamy filling felt in my mouth and how the tart flavor from the lime juice contrasted with the richness of the sweetened condensed milk. Delicious — but a complete sugar and dairy bomb.
I wanted to enjoy the pleasures of Key Lime pie without the sugar and dairy. By using avocados as a substitute for the sweetened condensed milk, I was able to create a lovely creamy base. You can use Key Lime juice, but I find that combining equal parts lemon and lime juice delivers the right level of tartness to balance the creamy avocados. I have also made this recipe with an almond crust in a springform pan, and it turned out perfectly. You can freeze the pie should you want to create more of an ice cream pie texture.
