This is one of those un-recipe, recipes. It’s an easy meal to prep, helping you to get a healthy dinner on the table in record time with minimal dishes. But it’s also impressive enough to serve to guests and a “keeper” recipe you will use over and over.
If you have never cooked broccoli rabe you are in for a nutritious treat. It’s one of my favorite bitter greens and using a microwave cooker is a pro tip for cooking it quickly and preserving it’s bright green color. You might even LOVE it so much that you find yourself steaming and sautéing it with garlic and chicken stock as a tasty vegetable side.

An Hearts of Palm Pasta With Broccoli Rabe & Spicy Sausage Recipe
Serves2-3 as an entree
- 2 bunches broccoli rabe washed and chopped
- 2 lbs uncooked spicy sausage links of your choice ( you can also use ground spicy sausage )
- 6 large cloves of garlic chopped
- 1 9oz package of hearts of palm linguini rinsed and drained
- 1 quart chicken stock
- 1 generous pinch red pepper flakes
- 2 tbsp nutritional yeast
- Shredded parmesan cheese for garnish-optional
In batches cook broccoli rabe in a lidded microwave cooker for 2.5 minutes or all at once if you have a large microwave cooking dish. Set cooked broccoli rabe aside.
In a Dutch oven or lidded sauté pan brown sausage until cooked through and remove to paper towels to drain.
Add chopped garlic to sauté pan and cook quickly.
Add quart of chicken stock to pan with garlic, stirring to get browned bits off the bottom of the pan, stir in pepper flakes and nutritional yeast.
Add broccoli rabe, cooked sausage and rinsed hearts of palm linguini to pan with stock and using tongs combine ingredients. Cover and heat through.
Serve in bowls and top with shredded parmesan cheese. Enjoy!
